  • 1/2 cup molasses
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, brown sugar, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the molasses, vegetable oil, egg, and milk until well combined.
  4. Gradually add the wet ingredients to the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
