Garlic Mushroom Pasta

Light and creamy garlic mushroom pasta recipe that’s perfect for a quick weeknight dinner.

  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 8 ounces sliced mushrooms
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced mushrooms and cook for 5-7 minutes until they are softened and browned.
  4. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and creamy.
  5. Add the cooked fettuccine to the skillet and toss to combine. Season with salt and pepper to taste.
  6. Serve immediately, garnished with fresh parsley.

Notes

  • For a vegan version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
  • Adding spinach or peas can provide extra nutrition and color.
