Garlic Italian Broccoli Soup

A delicious and healthy garlic Italian broccoli soup that warms you from the inside out.

Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and diced onion, sauté until onions are translucent.
  3. Add broccoli florets and cook for about 5 minutes.
  4. Pour in the vegetable broth, salt, pepper, and red pepper flakes. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in the heavy cream and heat through before serving.

Notes

  • For a vegan version, substitute heavy cream with coconut milk.
