French Onion Soup Rice

A rich and comforting twist on classic French Onion Soup featuring rice and turkey bacon.

  • 1 cup Arborio rice
  • 4 slices turkey bacon
  • 1 large onion, thinly sliced
  • 3 cups beef broth
  • 1 cup shredded Gruyère cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. Add onions to the pot and cook until caramelized, about 15 minutes.
  3. Stir in Arborio rice, thyme, and black pepper. Cook for 2 minutes, stirring frequently.
  4. Pour in beef broth and bring to a boil. Add bay leaf and reduce heat to low. Cover and simmer for 20 minutes.
  5. Remove from heat, stir in crispy turkey bacon and half the cheese. Cover and let sit for 5 minutes.
  6. Serve topped with remaining cheese.

Notes

  • For a vegetarian version, substitute turkey bacon with mushrooms.
  • Add a splash of white wine for extra flavor while cooking the rice.
