  • 4 cups beef broth
  • 2 cups cooked chicken, shredded
  • 6 slices turkey bacon, chopped
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 1 cup Swiss cheese, shredded
  • 4 slices of baguette
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add onions and garlic to the pot, sautéing until onions are caramelized.
  3. Stir in thyme, balsamic vinegar, and cook for another minute.
  4. Add the beef broth and shredded chicken, and bring to a boil.
  5. Reduce heat and let it simmer for 15 minutes.
  6. Toast baguette slices, then place them on top of the soup.
  7. Sprinkle shredded Swiss cheese over the top and broil until melted.
  8. Garnish with crispy turkey bacon and serve hot.
