French Onion Chicken Soup

A comforting and flavorful French onion chicken soup that pairs perfectly with turkey bacon.

  • 4 cups beef broth
  • 2 cups cooked chicken, shredded
  • 1 large onion, sliced
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 tablespoon balsamic vinegar
  • 1 cup shredded Gruyère cheese
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and set aside.
  2. Add the sliced onions to the pot and sauté until caramelized, about 15 minutes.
  3. Pour in the beef broth and add the shredded chicken, thyme, balsamic vinegar, salt, and pepper.
  4. Simmer for 20 minutes to blend flavors.
  5. Serve hot, topped with crispy turkey bacon and shredded Gruyère cheese.
