French Onion Chicken Orzo Casserole

A delightful and easy casserole featuring the rich flavors of French onion soup combined with chicken and orzo.

  • 2 cups cooked chicken, shredded
  • 1 large onion, thinly sliced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 cup Swiss cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and sauté the onions until caramelized.
  3. In a large bowl, combine cooked orzo, chicken, caramelized onions, beef broth, heavy cream, garlic powder, thyme, salt, and pepper.
  4. Transfer the mixture to a greased baking dish and top with Swiss cheese.
  5. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
