Flourless Banana & Protein Powder Pancakes

Ingredients

  • 2 eggs
  • 1/2 cup protein powder
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp coconut oil or butter for cooking

Instructions

  1. In a bowl, mash the ripe bananas until smooth.
  2. Add the eggs, protein powder, baking powder, vanilla extract, and salt. Mix until well combined.
  3. Heat a non-stick skillet over medium heat and add a bit of coconut oil or butter.
  4. Pour small amounts of batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden brown.
