Fall Apple Cider Stew Mash

Ingredients

  • 2 cups apple cider
  • 1 pound potatoes, peeled and diced
  • 1 pound carrots, sliced
  • 1 pound beef stew meat, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sauté until fragrant.
  2. Add the beef stew meat and cook until browned on all sides.
  3. Add the carrots and potatoes and stir for a few minutes.
  4. Pour in the apple cider and add thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until meat is tender.
  6. Adjust seasoning as needed and serve warm.
