  • 1 pound turkey bacon
  • 2 cups diced potatoes
  • 1 cup chopped carrots

  • 2 teaspoons dried thyme

  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add onion, garlic, carrots, and potatoes. Cook until the vegetables are tender.
  3. Pour in apple cider and add thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for about 20 minutes.
  5. Stir in the crispy turkey bacon and cook for an additional 5 minutes.
