Easy Thai Curry Chicken Soup

A delicious and comforting Thai curry chicken soup that brings flavor and warmth to your table.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 can (14 ounces) coconut milk
  • 2 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 2 cups mixed vegetables (carrots, bell peppers, snap peas)
  • 1 lime (juiced)
  • fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the cubed chicken and cook until browned.
  3. Stir in the red curry paste and cook for an additional minute.
  4. Pour in the coconut milk and chicken broth, then add the fish sauce and brown sugar.
  5. Bring to a simmer and add the mixed vegetables.
  6. Cook until the vegetables are tender and the chicken is cooked through.
  7. Stir in lime juice and serve hot with cilantro on top.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
