Easy Pumpkin Streusel Bars

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup pumpkin puree
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, brown sugar, and butter until crumbly.
  3. Press half of this mixture into the bottom of a greased baking pan.
  4. In another bowl, mix the pumpkin puree, eggs, vanilla, pumpkin spice, baking powder, baking soda, and salt until smooth.
  5. Pour the pumpkin mixture over the crust.
  6. Sprinkle the remaining crumb mixture on top of the pumpkin layer.
  7. Bake for 30-35 minutes, until a toothpick inserted comes out clean.
  8. Allow to cool before slicing into bars.
