1 cup dried chickpeas
1 small onion, chopped
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon baking powder
1/4 cup flour
Vegetable oil for frying
Instructions
Soak chickpeas in water overnight.
Drain and rinse the chickpeas.
In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, pepper, and baking powder. Process until blended but not pureed.
Add flour and mix well.
Shape the mixture into small balls or patties.
Heat oil in a frying pan over medium heat. Fry falafel until golden brown.
