- 8 ounces lasagna noodles
- 4 slices turkey bacon
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1 cup ricotta cheese
- 2 cups spinach, fresh
- 1 cup mozzarella cheese, shredded
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cook lasagna noodles according to package instructions. Drain and set aside.
- In a large pot, cook turkey bacon over medium heat until crispy. Remove and chop bacon, leaving drippings in pot.
- Add olive oil, onion, and garlic to pot. Sauté until onions are translucent.
- Add diced tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
- Stir in heavy cream, ricotta cheese, and spinach. Simmer until spinach wilts.
- Add cooked lasagna noodles and chopped bacon. Stir well.
- Remove from heat and top with mozzarella cheese.
