Easy Creamy Lasagna Soup

  • 8 ounces lasagna noodles
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 2 cups spinach, fresh
  • 1 cup mozzarella cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook lasagna noodles according to package instructions. Drain and set aside.
  2. In a large pot, cook turkey bacon over medium heat until crispy. Remove and chop bacon, leaving drippings in pot.
  3. Add olive oil, onion, and garlic to pot. Sauté until onions are translucent.
  4. Add diced tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
  5. Stir in heavy cream, ricotta cheese, and spinach. Simmer until spinach wilts.
  6. Add cooked lasagna noodles and chopped bacon. Stir well.
  7. Remove from heat and top with mozzarella cheese.
  8. Serve hot and enjoy!
