Easy Creamy Lasagna Soup

  • 1 pound ground beef
  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup heavy cream
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef and Italian sausage over medium heat.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the crushed tomatoes and chicken broth, bringing to a boil.
  4. Add the broken lasagna noodles and cook until tender.
  5. Reduce heat and stir in the heavy cream and ricotta cheese until well blended.
  6. Top with mozzarella and Parmesan cheese, allowing to melt before serving.
