Easy Broccoli Cheddar Soup

  • 4 cups broccoli florets
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg

Instructions

  1. In a large pot, melt the butter over medium heat. Add onions and garlic, sauté until translucent.
  2. Add the broccoli and vegetable broth, bring to a boil, then reduce heat and simmer until broccoli is tender.
  3. Stir in heavy cream and cheese until melted and smooth.

Notes

  • For a thicker soup, blend half of it and return to the pot.
