Dill Pickle Tofu Bites Recipe

  • 1 block firm tofu
  • 1 cup dill pickles, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup nutritional yeast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Drain and press the tofu to remove excess moisture.
  3. Cut the tofu into bite-sized cubes.
  4. In a mixing bowl, combine the chopped dill pickles, breadcrumbs, nutritional yeast, olive oil, garlic powder, onion powder, salt, and pepper.
  5. Gently fold in the tofu cubes until well coated.
  6. Spread the mixture onto a baking sheet lined with parchment paper.
  7. Bake for 25-30 minutes or until golden brown and crispy.

Notes

  • For a spicier version, add some crushed red pepper flakes.
