  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup diced onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the shredded chicken, 1/2 cup enchilada sauce, diced onions, garlic powder, cumin, salt, and pepper.
  3. Heat the tortillas in a skillet to soften them.
  4. Fill each tortilla with the chicken mixture and roll them up.
  5. Place the rolled tortillas in a baking dish and cover with the remaining enchilada sauce and cheese.
  6. Bake for 20-25 minutes until the cheese is bubbly and golden.

Notes

  • Feel free to add black beans or corn to the chicken mixture for extra flavor.
  • You can use flour tortillas instead of corn if preferred.
