  • 1 cup black beans, cooked and mashed
  • 1 cup corn, canned or frozen
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 small corn tortillas
  • 2 tablespoons vegetable oil
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a bowl, combine black beans, corn, cumin, chili powder, and cilantro. Mix well.
  2. Heat tortillas in a skillet until warm and pliable.
  3. Scoop the filling onto one side of each tortilla, then roll tightly to enclose the filling.
  4. Heat vegetable oil in a pan over medium heat. Place the rolled taquitos seam-side down in the pan.
  5. Fry for about 3-4 minutes on each side until crisp and golden brown.
  6. Drain on a paper towel and serve with your choice of salsa or guacamole.
