Crispy Sheet Pan Black Bean Tacos

A delicious and easy recipe for crispy sheet pan black bean tacos that the whole family will enjoy!

  • 1 can black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. On a sheet pan, mix the black beans, olive oil, chili powder, cumin, garlic powder, and onion powder.
  3. Spread the mixture out in an even layer on the pan.
  4. Bake for 15 minutes.
  5. Remove from oven, add the tortillas, and sprinkle cheese on top.
  6. Return to the oven and bake for an additional 5-7 minutes until cheese is melted and tortillas are crispy.
  7. Serve with sliced avocado, chopped cilantro, and lime wedges.

Notes

  • For extra crunch, broil for 1-2 minutes after baking.
  • Feel free to add your favorite toppings such as sour cream or salsa.
