- 2 medium zucchinis
- 1 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 cup vegetable oil for frying
- Grate zucchinis and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
- In a large bowl, combine grated zucchini, flour, Parmesan cheese, eggs, parsley, green onions, garlic powder, and black pepper.
- Heat vegetable oil in a skillet over medium-high heat.
- Drop spoonfuls of the mixture into the skillet and flatten slightly.
- Fry for about 3-4 minutes on each side, or until golden brown.
