  • 2 medium zucchinis
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 cup vegetable oil for frying

Instructions

  1. Grate zucchinis and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
  2. In a large bowl, combine grated zucchini, flour, Parmesan cheese, eggs, parsley, green onions, garlic powder, and black pepper.
  3. Heat vegetable oil in a skillet over medium-high heat.
  4. Drop spoonfuls of the mixture into the skillet and flatten slightly.
  5. Fry for about 3-4 minutes on each side, or until golden brown.
  6. Remove from skillet and drain on paper towels. Serve warm.

Notes
