  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/2 cup olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchini, flour, eggs, feta cheese, parsley, garlic, salt, pepper, and paprika. Mix well until fully combined.
  3. Heat olive oil in a skillet over medium heat. Spoon the zucchini mixture into the skillet to form small fritters.
  4. Cook for about 3-4 minutes on each side until golden brown. Transfer to the baking sheet.
  5. Bake in the preheated oven for 10 minutes until crispy.
