- 1 loaf crusty Italian bread
- 6 slices turkey bacon
- 1 cup cherry tomatoes, halved
- 1/2 cup diced bell peppers
- 1/4 cup finely chopped red onion
- 2 tablespoons olive oil
- 1 teaspoon balsamic vinegar
- Salt and pepper to taste
- Preheat your oven to 400°F (200°C).
- Slice the Italian bread into 1/2-inch thick slices.
- Place the bread slices on a baking sheet and brush with olive oil.
- Bake for 5–7 minutes until golden and crispy.
- While the bread is baking, cook the turkey bacon in a skillet over medium heat until crispy. Remove and chop into pieces.
- In a bowl, combine the cherry tomatoes, bell peppers, red onion, balsamic vinegar, and season with salt and pepper.
- Top each crispy slice of bread with the veggie mixture and turkey bacon pieces.
- Serve immediately and enjoy!
