  • 1 loaf crusty Italian bread
  • 6 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced bell peppers
  • 1/4 cup finely chopped red onion
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the Italian bread into 1/2-inch thick slices.
  3. Place the bread slices on a baking sheet and brush with olive oil.
  4. Bake for 5–7 minutes until golden and crispy.
  5. While the bread is baking, cook the turkey bacon in a skillet over medium heat until crispy. Remove and chop into pieces.
  6. In a bowl, combine the cherry tomatoes, bell peppers, red onion, balsamic vinegar, and season with salt and pepper.
  7. Top each crispy slice of bread with the veggie mixture and turkey bacon pieces.
  8. Serve immediately and enjoy!
