Creamy White Bean

A delicious and comforting dish made with creamy white beans, turkey bacon, and fresh herbs.

Ingredients

  • 2 cups cooked white beans
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large saucepan, cook turkey bacon until crispy. Remove and set aside.
  2. In the same pan, add olive oil and sauté onions until translucent.
  3. Add garlic and cook for an additional minute.
  4. Stir in the cooked white beans and vegetable broth.
  5. Add thyme, salt, and pepper, and simmer for 10 minutes.
  6. Mash lightly with a fork for desired creaminess.
  7. Stir in chopped parsley and crumble the turkey bacon over the top before serving.

Notes

  • For added creaminess, blend a portion of the beans with the broth.
  • Serve with crusty bread for a complete meal.
