Creamy Vegetarian Gnocchi Soup

A rich and creamy vegetarian soup featuring soft gnocchi and fresh vegetables.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 6 cups vegetable broth
  • 1 pound gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until vegetables are soft, about 5-7 minutes.
  2. Stir in dried thyme and basil, cooking for another minute.
  3. Add vegetable broth and bring to a boil.
  4. Stir in gnocchi and cook until they float to the top, approximately 3-5 minutes.
  5. Reduce heat and stir in spinach and heavy cream, allowing to heat through. Season with salt and pepper.
  6. Serve warm and enjoy!

Notes

  • This soup can easily be made vegan by substituting heavy cream with coconut milk.
  • Add your favorite vegetables for added nutrition.
