  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon dried basil
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and cook until softened.
  2. Add garlic and sauté for 1 minute until fragrant.
  3. Stir in the crushed tomatoes, vegetable broth, sugar, and dried basil. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Blend the mixture until smooth using an immersion blender.
  5. Stir in heavy cream and season with salt and pepper.
  6. Garnish with fresh basil leaves before serving.
