Ingredients

  • 2 pounds red potatoes
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 cup celery, chopped
  • 1/2 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 hard-boiled eggs, chopped

Instructions

  1. Wash the red potatoes and cut them into bite-sized pieces.
  2. Boil the potatoes in a large pot of salted water until tender, about 15 minutes.
  3. Drain the potatoes and let them cool.
  4. In a large bowl, mix together the mayonnaise, apple cider vinegar, and Dijon mustard.
  5. Add the cooled potatoes, celery, red onion, parsley, salt, pepper, and eggs to the bowl.
  6. Toss everything together until well combined.
  7. Cover and refrigerate for at least 1 hour before serving.
