  • 1 medium onion
  • 4 slices turkey bacon
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Peel and dice the potatoes.
  2. In a large pot, cook the turkey bacon until crispy, then remove and crumble.
  3. In the bacon fat, sauté the onion until translucent.
  4. Add the diced potatoes and chicken broth to the pot.
  5. Bring to a boil and cook until the potatoes are tender.
  6. Blend the soup until smooth and creamy, then stir in the heavy cream, garlic powder, salt, and pepper.
  7. Top with crumbled turkey bacon before serving.
