- 4 medium sweet potatoes
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 5 ounces fresh spinach
- 1/2 cup cream cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake them for about 45 minutes until tender.
- In a skillet, heat olive oil over medium heat. Add the diced onion and garlic, cooking until softened.
- Add the sliced mushrooms and cook until they are golden brown.
- Stir in the spinach until wilted, then reduce heat and mix in the cream cheese and Parmesan until melted and creamy.
