  • 5 ounces fresh spinach
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake them for about 45 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Add the diced onion and garlic, cooking until softened.
  4. Add the sliced mushrooms and cook until they are golden brown.
  5. Stir in the spinach until wilted, then reduce heat and mix in the cream cheese and Parmesan until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Once the sweet potatoes are baked, cut them in half and scoop out a bit of flesh to mix with the mushroom and spinach mixture.
  8. Stuff the sweet potatoes with the creamy filling and return to the oven for another 10 minutes.
  9. Serve warm, garnished with extra Parmesan if desired.
