- 1 pound ground turkey
- 4 ounces turkey bacon
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken broth
- 2 teaspoons Italian seasoning
- 8 ounces lasagna noodles, broken
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add ground turkey, onion, and garlic. Cook until the turkey is browned and onions are translucent.
- Add crushed tomatoes, chicken broth, Italian seasoning, and bring to a boil.
- Add broken lasagna noodles and cook until tender.
- Stir in ricotta cheese and half of the mozzarella cheese until melted.
- Top with remaining mozzarella and Parmesan cheese. Cook until cheese is bubbly.
- Serve hot, garnished with bacon pieces.
