Creamy Lasagna Soup

This Creamy Lasagna Soup combines the classic flavors of lasagna in a comforting, hearty soup, featuring turkey bacon for a healthier twist.

Ingredients

  • 1 pound ground turkey
  • 4 ounces turkey bacon
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add ground turkey, onion, and garlic. Cook until the turkey is browned and onions are translucent.
  3. Add crushed tomatoes, chicken broth, Italian seasoning, and bring to a boil.
  4. Add broken lasagna noodles and cook until tender.
  5. Stir in ricotta cheese and half of the mozzarella cheese until melted.
  6. Top with remaining mozzarella and Parmesan cheese. Cook until cheese is bubbly.
  7. Serve hot, garnished with bacon pieces.

Notes

  • For extra creaminess, add a splash of heavy cream.
  • Substitute ground beef or sausage if preferred.
