  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups frozen corn
  • 1 cup diced potatoes
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and chop into pieces.
  2. In the same pot, add diced onion and garlic, sauté until softened.
  3. Add chicken broth, bring to a boil.
  4. Add heavy cream, corn, potatoes, smoked paprika, black pepper, and salt. Stir well.
  5. Reduce heat and let simmer for 20 minutes or until potatoes are tender.
  6. Stir in chopped turkey bacon and garnish with parsley before serving.

Notes

  • For a spicier version, add a pinch of cayenne pepper.
  • This soup can be easily made vegetarian by omitting the turkey bacon and using vegetable broth.
