- 4 slices turkey bacon
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 2 cups frozen corn
- 1 cup diced potatoes
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon fresh parsley, chopped
- In a large pot, cook turkey bacon over medium heat until crispy. Remove and chop into pieces.
- In the same pot, add diced onion and garlic, sauté until softened.
- Add chicken broth, bring to a boil.
- Add heavy cream, corn, potatoes, smoked paprika, black pepper, and salt. Stir well.
- Reduce heat and let simmer for 20 minutes or until potatoes are tender.
- Stir in chopped turkey bacon and garnish with parsley before serving.
Notes
