  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix pumpkin puree, sugar, and oil.
  3. Beat in the eggs and vanilla extract until well combined.
  4. In another bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Slowly add the dry ingredients to the pumpkin mixture and stir until just blended.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the bars are baking, beat together cream cheese, powdered sugar, and lemon juice until smooth.
  9. Once the bars are cool, spread the cream cheese mixture evenly on top.
  10. Cut into squares and serve.
