Ingredients

  • 4 slices turkey bacon
  • 1 cup chopped onions
  • 2 cups sliced mushrooms
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside, then chop.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add the mushrooms and cook until soft.
  4. Stir in the vegetable broth and thyme. Bring to a boil.
  5. Reduce heat and let simmer for 15 minutes.
  6. Blend the soup until smooth, then return to pot.
  7. Add heavy cream, chopped turkey bacon, salt, and pepper. Heat through.
  8. Serve warm.

Notes

  • For a vegan version, substitute turkey bacon with extra mushrooms and use coconut cream.
