  • 4 slices turkey bacon
  • 1 pound ground turkey
  • 4 cups chicken broth
  • 1 cup shredded carrots
  • 2 cups coleslaw mix
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ginger, grated
  • 2 eggs, beaten

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, add ground turkey and cook until browned.
  3. Add chicken broth, carrots, coleslaw mix, green onions, garlic, soy sauce, sesame oil, and ginger. Bring to a simmer.
  4. Stir in crumbled turkey bacon.
  5. Slowly pour in beaten eggs while stirring the soup.
