  • 4 boneless, skinless chicken breasts
  • 2 dried guajillo peppers
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 2 tablespoons olive oil

Instructions

  1. Soak the guajillo peppers in hot water for 15 minutes until softened.
  2. In a blender, combine softened guajillo peppers, onion, garlic, cumin, oregano, salt, and pepper.
  3. Blend until smooth and set aside.
  4. In a pressure cooker, heat olive oil over medium heat.
  5. Brown the chicken breasts on both sides for about 3-4 minutes each.
  6. Pour the guajillo sauce over the chicken and add chicken broth.
  7. Seal the pressure cooker and cook on high pressure for 10 minutes.
  8. Release the pressure and serve the chicken with sauce over rice or tortillas.
