  • 4 cups chicken broth
  • 1 cup sliced wild mushrooms
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 4 strips turkey bacon, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pan, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Stir in onion and garlic, cooking until softened.
  3. Add the mushrooms and cook until tender, about 5 minutes.
  4. Stir in the Arborio rice and cook for an additional minute.
  5. Gradually add chicken broth, one ladle at a time, stirring frequently until absorbed.
  6. Once rice is cooked and creamy, stir in Parmesan cheese, parsley, salt, and pepper.
  7. Serve warm.

Notes

  • For extra creaminess, add a splash of white wine before adding the broth.
  • You can substitute the turkey bacon with regular bacon for a richer flavor.
