  • 4 cups mixed vegetables (carrots, peas, corn)
  • 2 cups cooked rice
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, combine the chicken broth, garlic powder, onion powder, dried thyme, salt, and pepper.
  3. Add in the mixed vegetables and cooked rice. Stir to combine.
  4. Shred the rotisserie chicken and add it to the pot.
  5. Simmer for 10 minutes until heated through.
  6. Transfer to a baking dish and bake for 20 minutes.
