- 1 pound chicken thighs, boneless and skinless
- 1 tablespoon coconut oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 can coconut milk
- 1 cup chicken broth
- 2 cups spinach, fresh
- 1 tablespoon lime juice
- salt to taste
- In a large pot, heat coconut oil over medium heat. Add onion and sauté until translucent.
- Add garlic and ginger, cooking until fragrant.

- Add chicken and cook until browned on all sides.
