Classic Sticky Toffee Pudding

A deliciously rich and moist sticky toffee pudding that is the perfect indulgent dessert for any occasion.

  • 200g dates, chopped
  • 250ml boiling water
  • 1 tsp vanilla extract
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a baking dish.
  2. In a bowl, soak the chopped dates in boiling water and add vanilla extract. Let it sit for 15 minutes.
  3. In a separate bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the flour, baking powder, baking soda, and salt.
  6. Fold in the soaked dates (along with the soaking water) into the batter.
  7. Pour the batter into the prepared baking dish and bake for 30-35 minutes.
  8. While the pudding is baking, prepare the toffee sauce by combining sugar, butter, and cream in a saucepan over medium heat until smooth.
  9. Once the pudding is done, let it cool slightly before serving with the warm toffee sauce.
