  • 1/2 cup unsalted butter, melted
  • 1/2 cup orange juice
  • 1 teaspoon orange zest
  • 1 large egg
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine melted butter, orange juice, orange zest, and the egg.
  4. Pour the wet ingredients into the dry ingredients, stirring until just combined. Gently fold in the cranberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
