- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1/2 cup pumpkin puree
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup granulated sugar (for topping)
- 1 tsp ground cinnamon (for topping)
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, mix the granulated sugar, brown sugar, oil, pumpkin puree, eggs, and vanilla until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared loaf pan.
- In a small bowl, mix the granulated sugar and cinnamon for the topping and sprinkle it over the batter.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
