Cinnamon Sugar Pumpkin Bread

A delightful and moist bread perfect for fall, infused with pumpkin and topped with cinnamon sugar.

  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/2 cup pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the granulated sugar, brown sugar, oil, pumpkin puree, eggs, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. In a small bowl, mix the granulated sugar and cinnamon for the topping and sprinkle it over the batter.
  7. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a richer flavor, add chopped walnuts or pecans.
  • This bread can be served warm or toasted for breakfast.
