Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together melted butter, eggs, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients, stirring until just combined.
  5. In a small bowl, mix brown sugar and cinnamon for the filling.
  6. Fill each muffin cup halfway with batter, sprinkle with the cinnamon-sugar mixture, then top with more batter until filled.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
