  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon

  • 1/2 cup brown sugar, packed
  • 1/2 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing well.
  4. In another bowl, combine the flour, baking powder, ground cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. In a small bowl, mix together the brown sugar and a sprinkle of cinnamon.
  7. Take a spoonful of dough, flatten it, and add a bit of the brown sugar mixture inside. Fold the dough over and shape it into a ball.
  8. Place the cookie balls on the prepared baking sheet and bake for 10-12 minutes, or until lightly golden.
  9. Let the cookies cool for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, drizzle with a glaze made from powdered sugar and milk.
  • These cookies can be made ahead and frozen.
