- 2 pounds sweet potatoes
- 1 cup chipotle gouda cheese, shredded
- 4 ounces turkey bacon, cooked and chopped
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
- Preheat the oven to 400°F (200°C).
- Peel and thinly slice the sweet potatoes.
- In a saucepan, combine heavy cream, garlic, smoked paprika, salt, and pepper. Bring to a simmer.
- Layer half of the sweet potatoes in a greased baking dish. Pour half of the cream mixture over them.
- Sprinkle half of the chipotle gouda and turkey bacon over the layer.
- Repeat the layers with the remaining ingredients.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.

- For added flavor, you can include a layer of sautéed onions.
- Serve with fresh herbs for garnish.
