- 1 tablespoon olive oil
- 1 cup diced onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced tomatoes
- 1 can diced green chilies
- 1 cup cooked and crumbled turkey bacon
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese (Mexican blend)
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
- Add the chicken broth, tomatoes, green chilies, turkey bacon, cumin, and chili powder. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Stir in the cheese and cilantro until melted.
- Season with salt and pepper to taste. Serve warm.
Notes
- For a spicier soup, add more diced green chilies.
- Top with additional cheese and cilantro before serving.
