Chile Relleno Soup

A delicious and hearty Chile Relleno Soup made with turkey bacon for a unique twist on a classic comfort food.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups diced tomatoes
  • 1 can diced green chilies
  • 1 cup cooked and crumbled turkey bacon
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese (Mexican blend)
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  2. Add the chicken broth, tomatoes, green chilies, turkey bacon, cumin, and chili powder. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes.
  4. Stir in the cheese and cilantro until melted.
  5. Season with salt and pepper to taste. Serve warm.

Notes

  • For a spicier soup, add more diced green chilies.
  • Top with additional cheese and cilantro before serving.
