  • 1 whole chicken, preferably organic
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, quartered
  • 4 cloves garlic, smashed
  • 1 bay leaf
  • 10 peppercorns
  • 4 quarts cold water

Instructions

  1. Place the chicken in a large stockpot and cover with cold water.
  2. Add the carrots, celery, onion, garlic, bay leaf, and peppercorns.
  3. Bring to a simmer over medium heat.
