Ingredients

  • 1 whole chicken, preferably organic
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, quartered
  • 4 cloves garlic, smashed
  • 1 bay leaf
  • 10 peppercorns
  • 2 teaspoons salt (adjust to taste)
  • 12 cups water

Instructions

  1. Place the chicken in a large stock pot.
  2. Add the carrots, celery, onion, garlic, bay leaf, peppercorns, and salt.
  3. Pour in the water until the chicken is fully submerged.
  4. Bring to a boil over high heat, then reduce to a simmer.
  5. Cover and let simmer for 4-6 hours, skimming off any foam that rises to the top.
  6. Remove the chicken and strain the stock through a fine-mesh sieve.
  7. Let the stock cool before storing it in the refrigerator or freezer.

Notes

  • For enhanced flavor, roast the chicken and vegetables before adding them to the pot.
