- 1 pound chicken breast, cubed
- 1 tablespoon olive oil
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 3 cups chicken broth
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- 1 package refrigerated pie crusts
- In a large pot, heat olive oil over medium heat. Add chicken and sauté until golden brown.
- Add carrots, celery, and onion. Cook until onions are translucent.
- Stir in chicken broth, peas, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer for 15 minutes.

- Cook for an additional 5 minutes until thickened.
- Prepare pie crust according to package instructions and cut into strips.
