  • 1 tablespoon olive oil
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 3 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 package refrigerated pie crusts

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken and sauté until golden brown.
  2. Add carrots, celery, and onion. Cook until onions are translucent.
  3. Stir in chicken broth, peas, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for 15 minutes.
  5. In a small bowl, whisk together cream and flour until smooth. Gradually stir into the pot.
  6. Cook for an additional 5 minutes until thickened.
  7. Prepare pie crust according to package instructions and cut into strips.
  8. Serve the soup hot, garnished with pie crust strips.

Notes

  • Feel free to add or substitute your favorite vegetables.
  • For a thicker soup, add more flour.
