Chicken Enchiladas

Delicious and easy-to-make chicken enchiladas that bring comfort to your dinner table.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup chopped onion
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix shredded chicken, onion, and half of the cheese with enchilada sauce.
  3. Warm the tortillas slightly to make them pliable.
  4. Fill each tortilla with the chicken mixture, roll them up and place them seam-side down in a baking dish.
  5. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  6. Bake for 20 minutes or until cheese is bubbly.

Notes

  • For added flavor, consider using different types of cheese.
  • Make it spicy by adding jalapeños to the chicken mixture.
