A delicious and healthier take on the classic Chicken and Broccoli Alfredo.

Ingredients

  • 2 cups broccoli florets
  • 1 pound chicken breast, sliced
  • 3 cups fettuccine pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup light cream
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook fettuccine according to package instructions; drain and set aside.
  2. In a skillet, heat olive oil over medium heat and add sliced chicken. Cook until browned, about 5-7 minutes.
  3. Add garlic and broccoli; cook for an additional 2-3 minutes.
  4. Stir in light cream and Parmesan cheese; simmer until thickened.
  5. Combine pasta with the sauce; mix well.
  6. Season with salt and pepper to taste. Serve warm.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • Substitute zucchini noodles for a low-carb option.
